Coconut Biscotti
INGREDIENTS:
- 1 ¼ cup Cookie Mix
- 1 Oz coconut flakes
- 2 tbsp rice milk
- 1 small egg
- 1 stick very soft butter
- Diced candied mango (or any other candied fruit)
- 1 tbsp vanilla extract
- 2 ½ tbsp vanilla-flavored powdered sugar
- ½ tsp powdered cinnamon
INSTRUCTIONS
- First, let the butter soften for 2 hours
- Preheat the oven to 340°F
- In a bowl place the softened butter and the egg
- Add vanilla extract and cinnamon to the milk and then pour it into the bowl
- Mix for a few minutes
- Add Cookie Mix, coconut flakes and mango dices
- Whisk until you obtain a totally combined batter
- Drop batter by tablespoons onto a baking tray covered by a baking sheet, leaving 2” between cookies
- Bake for 12 minutes at 340° F in ventilated oven
- Let the cookies cool for about 1 hour and then spread powdered sugar all over
