Oatmeal Raisin Cookies
INGREDIENTS:
- 1 package Caremoli Gluten Free Cookie Mix
- 1 stick of butter (1/2 cup), softened
- 2 large eggs, room temperature
- 2 tablespoons unsulphured molasses
- 1/2 cup Certified Gluten Free Rolled Oats
- 2/3 cup raisins
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
INSTRUCTIONS:
- In a large bowl or stand mixer, beat together butter and eggs, until light and fluffy
- Add molasses and continue to combine until incorporated
- With the mixer off, add in Caremoli Gluten Free Cookie Mix, cinnamon, nutmeg and oats
- Beat until just combined. Add raisins and combine again
- Line two baking sheets with parchment paper
- Using a cookie scoop, scoop 12 uniform sized cookies, 6 on each tray, spaced at least 2 inches
- Transfer the baking sheets to a refrigerator and chill the dough for 30-60 minutes
- When ready, preheat an oven to 350 degrees
- Bake cookies for 14-16 minutes, until edges crisp. Enjoy!
