Apple Crumb Muffins
INGREDIENTS:
- 1 package Muffin Mix
- 1/3 cup unsweetened apple sauce
- 1/3 cup cashew yogurt
- 2 tbsp vegetable oil
- 2 eggs
- 1/2 cup almond milk
- 1 tsp Cinnamon
- 1 apple, peeled and cubed
- Topping:
- 1/4 cup gluten free oat flour
- 2 tbsp oats
- 3 tbsp brown sugar
- 1 tsp cinnamon
- 3 tbsp vegetable oil
INSTRUCTIONS:
- In a small bowl, combine oat flour, oats, brown sugar and cinnamon. Stir to combine
- Add in vegetable oil and stir to create an evenly moist mixture
- While preparing the muffin batter, place bowl in the freezer
- In a large bowl, add yogurt, applesauce, vegetable oil, eggs and almond milk. Wisk to combine
- Add in Caremoli Muffin Mix and cinnamon and mix just until combined
- Fold in cubed apples
- Preheat oven to 400 degrees
- In either a standard 12 muffin pan or a jumbo 6 muffin pan, add muffin liners
- Portion mixture evenly and top with oat mixture
- Place muffin tray in oven, immediately turning down to 350 degrees. Bake 25 minutes
