Muffins with Apples & Cinnamon
INGREDIENTS:
- 1+ ½ cup Muffin Mix
- 2 medium eggs
- ¼ cup corn oil
- ¼ cup milk
- 2 apples
- 2 tsp vanilla extract
- 2 tbsp sugar
- Vanilla-flavored powdered sugar
- 1 pinch powdered ginger
- ½ tsp cinnamon powder
INSTRUCTIONS:
- Preheat the oven to 375°F
- Peal and dice the apples and spread sugar and cinnamon on top
- In a large bowl break two eggs and whisk them
- Add milk, vanilla extract and ginger
- Start to add 50% of the muffin mix, add oil and then, while whisking, the balance of the muffin mix
- Add apple dices
- Transfer batter into the muffin tray, up to approximately 60%
- Bake for approximately 30 minutes
- With a toothpick verify readiness before taking them out of the oven.
- Spread cinnamon and icing sugar and serve still warm
